The Little Things Newsletter #451 – Life, laughter, and lots of great food!

Welcome to the weekend, my friends! This is the last week of my vacation from work and I plan to make the most of it. My brother and his wife are planning to drive up from Georgia and enjoy the snow with us. (I’m praying that the weather won’t impact that too much!) There will be lots of card games and puzzles (because I make everyone do them with me now.), video games and laughter, as well as oh-so-many of our favorite foods.

I’ll be back in the “work” kitchen next week, ready to share a bunch of new recipes with you. In the meantime, as always, if you have recipe questions, leave a comment on the recipe post and I’ll do my best to answer as I’m able.

ON OUR MENU THIS WEEK: We’ll be spending a few mornings this week brunching at home and at the top of the meal request list was a breakfast hash topped with a fried egg. This is a savory breakfast lover’s dream of a meal. (There are several hash recipes to choose from on the website, as this is a long-time favorite for breakfasts and for dinner.)

And for the sweet cravings, these Cranberry Pancakes are going to happen and I’m making a batch of my Grandma’s Orange Sauce to top them.

The theme of this week is snow, snow, SNOW. So, my meal plan is all about the warm comfort foods. I’ll be making my Aunt Judy’s Creamy Vegetable Soup (oh, my gosh, it’s SO GOOD!) and a big pot of Lasagna Soup as well. 

Spicy chile sauce meets up with creamy refried beans and plenty of cheese to make these Red Chile Chicken Burritos. One bite was all it took and we were hooked. These are not little burritos that you’ll be holding in your hand to eat. These burritos will have you grabbing a plate and a fork and diving right into that creamy, cheesy, chicken-filled awesomeness.

Creamy, rich, and saucy, Stovetop Mac and Cheese was another request and I’ll be cooking up some Garlic Butter Steak Bites to serve alongside it. I’m thinking some Roasted Brussels Sprouts will be perfect with that meal.

We’ll also be making Chicken Cordon Bleu Sliders (from my first cookbook) and of course, (no surprise here) Tomato Soup with Grilled Cheese Sandwiches.

There’s a never-ending container of ready-to-eat vegetables for snacking, along with plenty of ranch dip. There’s also queso in the fridge, ready to heat, whenever the craving hits. It’s going to be a very tasty week!

Oh! And for a few sweet bites, I’ll be making the best ever gooey, soft and chewy Rice Krispy Treats, Monster Cookies, and being the ice cream addicts that we are, we’ll be churning something new pretty much every day – rain, snow, or sunshine.

What I’m CRAVING: Ha – see above. Clearly, I’m craving everything.

My FAVORITE THING this week is still my puzzle board. I’m absolutely obsessed with it. Would anyone be interested in seeing what we’re working on each week? For what it’s worth, I’m not a fancy puzzle person at all. About 500 pieces is the limit most of the time for me, as I don’t like to spend more than a day or so randomly working on a puzzle and much more than that is just a LOT of pieces to sort and deal with too. I have mad respect for anyone who does puzzles with thousands upon thousands of pieces. I can’t even imagine that!

What I’m LISTENING to: Hymns by Joey + Rory. Yes, I’m officially listening to music my mother enjoys. (Full disclosure, I don’t love everything on this album, but I enjoy more of it than I don’t.) I don’t even know who I am right now. Puzzles and old-school gospel hymns are in my favorites list. There are worse people I could strive to emulate. Love you, Mom. 

What I’m READING: My oldest son and I are reading A Call to Spiritual Reformation by D.A. Carson and doing an informal Bible study with it. So far, I love it. (Zero doubts this will be a 5 star review, so I’m confident recommending it while we’re still mid-study.)
